A dish based on edible flowers, chicharrón and even panela can be as healthy as it is easy to make at home. At least that is the proposal that nutritionists, dietitians and gastronomes of the CES University bring to eat healthy during the Feria de las Flores in Medellín.

"The recipe Salad of organic leaves, Antioquia flavors and vinaigrette of garlic, borage and nasturtium flowers is the proposal with which we want to conquer the palates of locals and visitors, with the ease of being able to make it at home, during these days of the fair and as a healthy alternative to food ” , expressed David Cardona Gallo, gastronomer and teacher at the Faculty of Nutrition and Food Sciences of the U. CES.

The dish includes among its ingredients borage flowers, nasturtium flowers and garlic flowers among the novelties. In addition, among the flavors of Antioquia the participation of toasted pork rinds, the load bean, the peasant complaint, the grated panela, among other foods, stands out.

The recipe came from the institutional restaurant of the CES University, N: cocina & nutrition, the only one that has a nutrition school in Antioquia, based on healthy and conscious eating.
