CESNUTRAL is the Center for Advanced Studies in Nutrition and Food of the Faculty of Nutrition and Food Sciences of Universidad CES. In this center we seek to respond locally to national and international challenges aimed at positively impacting the food and nutrition situation of individuals and communities.
To fulfill this purpose, we incorporate in each process an integral and interdisciplinary perspective, which allows a better understanding of food and nutrition problems and with that, we deliver answers in innovation, research and intervention for the public and private sectors, the academy , the industry, the communities and the society that demand it.

Facilities and equipment
At CESNUTRAL we have state-of-the-art equipment, specialized personnel and modern facilities that guarantee precision and accuracy in taking corporal measurements, from which the percentage of fat, muscle mass and bone tissue in a person is estimated and analyzed. Key information to make decisions in specialized nutritional management, the targeting of nutritional and food interventions, and clinical and population research for the validation or definition of reference standards and values.
For the sensorial evaluation, in CESNUTRAL we have the infrastructure and the specialized personnel for the planning, execution and analysis of sensory evaluation tests that allow us to characterize, evaluate the acceptance level and the quality conditions of the
products, through the application of standardized methodologies under current international regulations.
Likewise, aware of the importance of the sensory evaluation in the release and determination of the level of quality of the products in the industries, we offer the service of formation of sensory analysis panels of food of production plants.
The spaces and teams in CESNUTRAL allow to offer training in general and therapeutic gastronomy to the general population, groups of professionals and organizations with specific requirements; Demonstration processes related to the use of ingredients and supplies, as well as culinary tests and gastronomic transformations.
